For the Paladin:

+Can bless weapons as an unarmed attack

-Unable to heal when unarmed
Slayer
(All the stuff you have up there under "Crusader." I don't want to reuse that name since it's already the name of the Paladin's ability, and I think "Slayer" is more fitting.)
Cleric
+More mana
+Greater mana return
+Higher mana flow
-Less maximum health
-Less strength and dexterity
For the Soldier:
Gladiator
+Gains the ability to use improvised weapons
+More dexterity
+More maximum health
-Less strength
-No jousting
Keshik
+More dexterity
+Bonuses while mounted
-Less maximum health
-Poor armor
Oh, and on the Berserker:
+Can drink Fafnir-Cola to (temporarily) increase movement speed, jump height, strength, and dexterity, while simultaneously losing wisdom and defense.
...No, but really. It's a great idea. CAFFEINE POWER!
